  • 4 cups beef broth

  • 1 tablespoon tomato paste
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear beef cubes until browned on all sides.
  2. Add diced onion and minced garlic; sauté until onion is translucent (3–4 minutes).
  3. Stir in tomato paste and cook for another minute.
  4. Pour in a splash of beef broth to deglaze the pot.
  5. Return the beef to the pot along with remaining broth and vegetables.
  6. Season with thyme, rosemary, salt, and pepper.
  7. Bring to a boil; reduce heat and simmer covered for about 2 hours until beef is tender.
  8. Adjust seasoning if needed before serving hot, garnished with fresh parsley.
