  • 1 lb fresh asparagus (cut into 1-inch pieces)
  • 3 cups cubed potatoes (½-inch sides)
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup sharp cheddar cheese (shredded)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium-high heat, cook diced bacon until crispy. Drain on paper towels.
  3. Sauté chopped onion in bacon fat until softened; add minced garlic and cook for an additional minute.
  4. Season chicken breasts with salt and pepper; sear in olive oil until golden brown.
  5. In the same skillet, combine heavy cream and chicken broth; whisk in thyme and paprika, simmering until thickened.
  6. Layer half of the potatoes in a greased baking dish, followed by asparagus, half of the bacon, chicken breasts, creamy sauce, remaining potatoes, and bacon.
  7. Top with shredded cheese and cover with foil; bake for 25-30 minutes. Remove foil and bake for an additional 15-20 minutes until golden brown.
