  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon fine salt
  • ½ cup (113 g) unsalted butter, at room temperature
  • ½ cup (100 g) granulated sugar
  • ½ cup (100 g) packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 medium apple, peeled and finely chopped
  • ¼ cup (50 g) granulated sugar (for rolling)
  • 1 teaspoon ground cinnamon (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together your flour, baking soda, cream of tartar, ground cinnamon, and fine salt.
  3. In a separate large bowl, beat together the unsalted butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add in the egg and vanilla extract. Beat until well combined.
  5. Gradually add your dry ingredient mixture to the wet mixture. Mix until just combined.
  6. Gently fold in the chopped apple chunks.
  7. In a small bowl, mix together the remaining granulated sugar with ground cinnamon for rolling.
  8. Roll tablespoon-sized portions of dough into balls and coat each ball in the cinnamon-sugar mixture.
  9. Place dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
  10. Bake for 8–10 minutes until edges turn golden brown, then cool on a wire rack.
