  • 1/4 cup bread flour
  • 3 2/3 cups bread flour
  • 1/3 cup granulated sugar (for dough)
  • 2 teaspoons instant yeast
  • 1 teaspoon fine sea salt (for dough)
  • 1/3 cup whole milk (room temperature)
  • 1/3 cup heavy cream (room temperature)
  • 1 large egg (room temperature)
  • Tangzhong (from recipe above)
  • 6 tablespoons unsalted butter (room temperature)
  • 2/3 cup brown sugar (packed)
  • 4 tablespoons unsalted butter (room temperature)
  • 2 ounces cream cheese (room temperature)
  • 1 cup powdered sugar
  • 2 1/2 tablespoons heavy cream
  • 2 tablespoons apple butter (for frosting)

Instructions

  1. Prepare Tangzhong by combining equal parts flour and water in a saucepan over low heat until thickened. Set aside to cool.
  2. Soften diced apples in a saucepan with apple butter, sugar, lemon juice, and cinnamon over medium heat for about 5 minutes. Allow to cool.
  3. In a mixing bowl, whisk together bread flour, granulated sugar for dough, instant yeast, and salt.
  4. Add milk, cream, egg, and cooled Tangzhong to dry ingredients. Knead dough for about 8-10 minutes until elastic.
  5. Let dough rise covered in a warm spot until doubled in size (about 1-2 hours).
  6. Roll out dough into a rectangle; spread softened butter and apple filling evenly across it.
  7. Roll tightly and slice into individual rolls; place in a greased baking dish.
  8. Let rolls rise for about 30 minutes before baking at 350°F (175°C) for 25-30 minutes until golden brown.
  9. For frosting: whip cream cheese and butter until smooth; gradually add powdered sugar and cream until fluffy.
  10. Drizzle frosting over warm rolls before serving.
