  • 1/2 cup packed brown sugar
  • 3/4 cup cold butter (cut into cubes)
  • 2 packages (8 oz each) cream cheese (softened)
  • 1/2 cup plus 2 tablespoons sugar (divided)
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 3 medium apples (peeled and chopped)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 3/4 cup flour (for crumble topping)
  • 3/4 cup firmly packed brown sugar (for crumble topping)
  • 1/2 cup quick-cook oats (for crumble topping)
  • 1/3 cup cold butter (cut into cubes for crumble topping)

Instructions

  1. Preheat oven to 350°F.
  2. Prepare the crust by combining flour, brown sugar, and cold butter in a food processor until crumbly. Press into a lined 13×9 inch pan and bake for 15 minutes.
  3. Beat softened cream cheese with an electric mixer until fluffy. Add 1/2 cup sugar and vanilla; mix until smooth. Incorporate eggs one at a time, mixing until just combined. Spread over baked crust.
  4. In a bowl, toss chopped apples with remaining sugar, cinnamon, and nutmeg. Spread evenly over cheesecake filling.
  5. For crumble topping, pulse together flour, brown sugar, oats, and cold butter in a food processor until crumbly. Sprinkle over apple layer.
  6. Bake for 25–30 minutes or until filling is set. Cool to room temperature before refrigerating.
