Ingredients

Scale
  • 300 g all-purpose flour
  • 60 g granulated sugar
  • 220 g unsalted butter (cold, cut into cubes)
  • 1 kg apples (Pink Lady, Royal Gala, or Fuji)
  • 190 g brown sugar
  • 1¼ tsp ground cinnamon
  • Vanilla ice cream or preferred flavor
  • 75 g unsalted butter (for filling)
  • 1¼ tbsp cornstarch
  • ¼ tsp salt
  • 2½ tbsp water
  • 5 tbsp almond flour (optional)
  • 1 egg (for wash)
  • 1 tbsp water (for wash)

Instructions

  1. For the crust, mix flour, sugar, and salt in a bowl. Incorporate cold butter until crumbly. Add cold water gradually until the dough forms.
  2. Chill the dough for at least 30 minutes.
  3. Prepare the filling by slicing apples and cooking them with butter, brown sugar, cinnamon, cornstarch, and water until slightly softened.
  4. Roll out the chilled dough and place it in a pie dish. Fill with the apple mixture.
  5. Optionally sprinkle almond flour on top and cover with another layer of dough. Brush with egg wash and sprinkle brown sugar before baking at 180°C (350°F) for about 80 minutes.
  6. Serve warm with scoops of vanilla ice cream.
