  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 cup quick oats
  • 1/4 cup unsalted butter (melted)
  • 24 ounces full-fat cream cheese (room temperature)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1 tablespoon cornstarch (or 2 tablespoons all-purpose flour)
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream (room temperature)
  • 3 large eggs (room temperature)
  • Salted caramel sauce (for serving)

Instructions

  1. Preheat your oven to 350°F (180°C) and wrap a 9-inch springform pan in foil.
  2. Mix graham crumbs, brown sugar, and cinnamon; add melted butter and press into the pan for the crust.
  3. Toss sliced apples with brown sugar and cinnamon for the filling.
  4. Combine flour, brown sugar, oats, and melted butter for the crumble topping.
  5. Beat cream cheese until smooth; gradually mix in sugars, cinnamon, cornstarch, vanilla, sour cream, and eggs.
  6. Layer half of the cheesecake mixture over the crust, followed by half of the apple filling; repeat layers.
  7. Place in a water bath and bake for about 55 minutes until set but slightly jiggly.
  8. Cool in the oven before chilling in the fridge for at least 4 hours; serve with caramel sauce.
