  • 1 cup apple cider
  • 1 teaspoon vanilla extract
  • For the caramel filling:
  • ½ cup unsalted butter
  • 1 cup brown sugar
  • ¼ cup heavy cream
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  3. In a large mixing bowl, beat softened butter and brown sugar until fluffy.
  4. Mix in eggs one at a time, followed by apple cider and vanilla extract.
  5. Gradually add dry ingredients into the wet mixture until just combined.
  6. Drop rounded balls of dough onto a lined baking sheet.
  7. Bake for 12-15 minutes until edges are golden brown.
  8. For the caramel filling, melt butter in a saucepan over medium heat; stir in brown sugar and cream; boil for about 3-5 minutes until thickened; remove from heat and stir in vanilla extract.
  9. Once cookies are cool, spread caramel on one cookie and sandwich with another.
