  • 1/2 cup unsalted butter, at room temperature
  • 1 cup light brown sugar, packed
  • 2 teaspoons vanilla extract
  • 2 large eggs, at room temperature
  • 1/4 cup unsweetened applesauce
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/3 cup granulated sugar (for topping)
  • 1 tablespoon ground cinnamon (for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×5 inch loaf pan with parchment paper.
  2. In a saucepan over medium heat, reduce the apple cider until it thickens to about half a cup; allow to cool completely.
  3. In a stand mixer, cream together softened butter and brown sugar until light and fluffy.
  4. Add vanilla extract and eggs one at a time, mixing well after each addition. Stir in cooled apple cider and applesauce.
  5. In a separate bowl, whisk together flour, baking powder, baking soda, salt, and spices.
  6. Gradually add dry ingredients to the wet mixture in three additions until just combined.
  7. Pour batter into prepared loaf pan and smooth the top.
  8. Mix granulated sugar with cinnamon for topping; sprinkle generously over the batter.
  9. Bake for 35-40 minutes or until a toothpick inserted comes out clean. Cool before slicing.
