  • 1 lb large raw shrimp (peeled, deveined & tail-off)
  • 2 large eggs
  • 1.5 cups panko breadcrumbs
  • ½ cup tapioca flour
  • ½ cup mayonnaise
  • ¼ cup Thai sweet chili sauce
  • 8 oz coleslaw mix
  • Juice from ½ lime
  • 10 flour tortillas

Instructions

  1. Pat the shrimp dry and set up three bowls: one with tapioca flour mixed with seasonings, one with whisked eggs, and one with panko breadcrumbs.
  2. Dip each shrimp into the tapioca flour, then the egg mixture, followed by the panko breadcrumbs.
  3. Place the breaded shrimp in the air fryer basket and lightly spray with cooking oil.
  4. Air fry at 390°F for about 7 minutes, flipping halfway through for even crispiness.
  5. In a bowl, mix together mayonnaise, Thai sweet chili sauce, and sriracha for the bang bang sauce.
  6. Combine coleslaw mix, lime juice, and additional slaw ingredients in another bowl.
  7. Once shrimp is cooked, toss it gently with most of the bang bang sauce.
