  • 1 red delicious apple (thinly sliced)
  • 4.5 oz (130g) gorgonzola cheese (room temperature)
  • 1/2 pomegranate (arils removed)
  • 5.2 oz (150g) turkey strips
  • 5 tbsp olive oil
  • 1 tbsp apple vinegar
  • 1 cup walnut halves
  • 3 tbsp sugar
  • 1/4 tsp chili flakes
  • 1/4 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Prepare the candied walnuts by heating walnuts, sugar, chili flakes, paprika, and a pinch of salt in a small pan until coated.
  2. Grill turkey strips until crispy; drain on paper towels.
  3. Whisk together olive oil, apple vinegar, salt, and pepper in a bowl.
  4. Toss fresh spinach in the dressing until evenly coated.
  5. Assemble by dividing spinach among bowls and topping with apples, gorgonzola, pomegranate arils, turkey strips, and candied walnuts.
